Bread Technology at Scale

Each customer factory uses different combinations of equipment to produce their bread in different manufacturing environments, each with their own challenges, but in one respect, they are all similar. Mass-produced bread is manufactured quickly and on a large scale, meaning the dough needs some extra support to withstand the processing stresses placed on it.

Enzymes are a cost-effective way of conditioning the dough to ensure it is properly prepared for each processing step, and to deliver certain characteristics in the baked product such as volume, crust colour, crumb texture, and softness, as well as improved dough handling.

There are a variety of factors which influence your choice of release agent, including the hanging properties of the release agent, sugar level in your recipe, application method and the shelf life of the final product.
